  • 2 cans Whole Kernel Corn (15.25 oz each)
  • 2 Jalapenos (seeded and diced)
  • 1 cup Colby Jack Cheese (shredded)
  • ⅔ cup Sour Cream
  • 8 oz Cream Cheese (cubed)
  • 6 slices Bacon (cooked and chopped)
  • ¼ cup Cilantro (chopped)
  • ¼ cup Queso Fresco
  • 1 Lime
  • 1 bag Tortilla Chips or Fritos
  • 2 tsp Tajin Seasoning (optional)

Instructions

  1. Prep your ingredients by gathering all the items you need.
  2. Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes. Place it on a paper towel to drain, then chop.
  3. Combine the corn, sour cream, and cream cheese in a mixing bowl and mix until creamy.
  4. Mix in the Colby Jack cheese, jalapenos, half of the bacon, and Tajin seasoning if using.
  5. Add the chopped cilantro and Queso Fresco, folding them in gently.
  6. Serve the dip in a bowl, garnished with reserved bacon, cilantro, and lime wedges.
  7. Dive in with tortilla chips or Fritos!
