Cozy Autumn Wild Rice Soup

A comforting wild rice soup perfect for chilly autumn evenings, filled with hearty ingredients and warm flavors.

Ingredients

  • 1 cup wild rice
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 medium potato, diced
  • 6 cups vegetable or chicken broth
  • 1 cup canned pumpkin puree
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)

Instructions

  1. Sauté the aromatics in olive oil in a large pot over medium heat until tender and translucent, about 5-7 minutes.
  2. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Mix in diced potatoes, wild rice, thyme, rosemary, salt, and pepper, stirring well to combine.
  4. Pour in the broth and pumpkin puree, stirring and scraping any bits from the bottom of the pot.
  5. Bring the soup to a boil, then reduce heat to low, cover, and let it simmer for about 45 minutes.
  6. Stir in heavy cream if using and heat for another 5-10 minutes.
  7. Serve in bowls and enjoy!

Notes

Serve garnished with a sprig of fresh thyme or parsley, and consider a drizzle of extra virgin olive oil for added flavor.
