Creamy Cucumber Salad

A refreshing and creamy cucumber salad that’s perfect for any meal, bringing comfort and nostalgia to your table.

Ingredients

  • 2 large cucumbers
  • 1 cup Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash the cucumbers thoroughly under running water. Slice them thinly—about 1/4 inch thick is perfect. Sprinkle with salt and let sit for 10-15 minutes to draw out excess water. Drain any liquid.
  2. Combine the Greek yogurt, minced garlic, chopped dill, and lemon juice in a mixing bowl. Stir until fully blended.
  3. Toss the cucumber slices into the bowl with the creamy dressing and fold until fully coated.
  4. Cover the bowl and chill in the refrigerator for at least 30 minutes before serving.

Notes

Feel free to experiment with other herbs and add spices for a unique twist. This salad can be prepped ahead and stored in the fridge for up to 2 days.
