Cheesy Zucchini Casserole

A comforting Cheesy Zucchini Casserole that is simple, satisfying, and a great way to sneak in veggies for the whole family.

  • 4 medium zucchinis, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the zucchini by slicing into thin rounds and sprinkling with salt; let sit for 10 minutes.
  3. Sauté the zucchini in olive oil over medium heat for 5-7 minutes until softened.
  4. Mix the beaten eggs, milk, shredded cheese, grated Parmesan, garlic powder, oregano, salt, and pepper in a bowl until well combined.
  5. Layer half of the sautéed zucchini in a greased baking dish, pour half of the cheese mixture over it, then repeat layers finishing with breadcrumbs.
  6. Bake for 30-40 minutes until golden brown and bubbling.
  7. Serve warm and enjoy!

Notes

For a healthier version, consider using nutritional yeast instead of cheese. You can also experiment with different vegetables.
