Creamy Pasta Salad Bliss

A refreshing bowl of Creamy Pasta Salad that’s a perfect summer side dish, filled with vibrant flavors and textures.

  • 8 oz Garden Rotini Pasta
  • 1 medium Red Onion
  • 1 medium Cucumber
  • 1 pint Grape Tomatoes
  • 1 medium Yellow Bell Pepper
  • 1 cup Italian Vinaigrette Dressing
  • 1/2 cup Mayonnaise
  • 1 tsp Cajun Seasoning
  • 1/2 tsp Ground Black Pepper
  • 1 tbsp White Sugar

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the garden rotini pasta and cook according to package instructions until al dente, about 7-9 minutes. Stir occasionally to prevent sticking. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside!
  2. Chop the red onion, cucumber, grape tomatoes, and yellow bell pepper into bite-sized pieces.
  3. In a large mixing bowl, combine the Italian vinaigrette, mayonnaise, Cajun seasoning, ground black pepper, and white sugar.
  4. Pour the cooled pasta into the bowl with the dressing. Gently fold in your chopped veggies until everything is well coated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.

Notes

This pasta salad can be made a day in advance for even better flavor!
