Zucchini Rice Gratin

A comforting blend of tender zucchini, rice, and bubbling cheese that evokes nostalgic memories.

  • 2 cups shredded zucchini
  • 1 cup cooked rice
  • 1 cup cheese (cheddar and mozzarella)
  • ½ cup breadcrumbs
  • 2 tablespoons butter
  • Salt and pepper to taste
  • ¼ teaspoon garlic powder (optional)
  • ¼ teaspoon onion powder (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your zucchini by grating it and squeezing out excess moisture.
  3. Mix in a bowl: shredded zucchini, cooked rice, garlic powder, onion powder, salt, and pepper.
  4. Stir in your cheese, reserving some for the top.
  5. Butter a baking dish to prevent sticking.
  6. Layer the zucchini-rice mixture into the prepared baking dish.
  7. Sprinkle breadcrumbs and any remaining cheese on top.
  8. Bake for about 30-35 minutes until golden and bubbly.
  9. Let sit for 5-10 minutes before serving.
