Bacon, Brussels Sprouts, and Butternut Squash Pasta

  • 8 oz pasta (your choice)
  • 6 strips of bacon, chopped
  • 1 cup Brussels sprouts, halved
  • 1 cup butternut squash, diced
  • 1/2 cup parmesan cheese, grated
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and add your pasta. Cook according to package instructions until al dente.
  2. Sauté the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy and golden, about 5-7 minutes.
  3. Add the Brussels Sprouts: Once the bacon is crispy, add the halved Brussels sprouts to the skillet. Sauté for about 4-5 minutes until they are slightly tender and browned.
  4. Toss in the Butternut Squash: Now, add the diced butternut squash and a splash of olive oil. Cook for an additional 8-10 minutes, or until the squash is tender and caramelized.
  5. Combine Everything: Toss the drained pasta into the skillet with the sautéed bacon and veggies. Add the lemon juice, grated parmesan, and a bit of reserved pasta water to create a sauce.
  6. Season: Taste and adjust with salt and pepper—seasoning is key to flavor!

Notes

Plate in warm bowls and sprinkle with extra parmesan. Serve with garlic bread and arugula salad for a complete meal.
