Parmesan Zucchini Squares

Delightful Parmesan Zucchini Squares that capture the essence of rustic cooking, perfect for sharing with friends and family.

  • 2 cups zucchini, grated
  • 1 cup Bisquick
  • 1 cup Parmesan cheese, grated
  • ½ cup onion, finely chopped
  • 3 eggs
  • ¼ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini using a box grater or food processor and squeeze out excess moisture.
  3. Combine the Bisquick, Parmesan, and chopped onions in a large mixing bowl.
  4. Whisk together the eggs, milk, salt, and pepper in a separate bowl.
  5. Add the grated zucchini to the wet ingredients and mix well.
  6. Pour the wet mixture into the dry ingredients and stir until just combined.
  7. Grease a 9×13 inch baking dish and pour the zucchini mixture into it.
  8. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  9. Cool for 10-15 minutes, slice into squares, and serve.

Notes

Feel free to customize with additional veggies, herbs, or cheeses. Leftovers can be frozen for up to a month.
