Peach Cobbler Egg Rolls

Delightful crispy egg rolls filled with sweet peaches and a hint of cinnamon, served with a luxurious vanilla bean sauce.

  • 2 cups peaches, diced
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Oil for frying
  • Powdered sugar for dusting (optional)
  • For the Vanilla Bean Sauce:
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 vanilla bean

Instructions

  1. Prepare the Peach Filling
  2. Dice the peaches into small chunks.
  3. Mix the diced peaches, sugar, cinnamon, lemon juice, and vanilla extract in a bowl.
  4. Allow the mixture to sit for about 10 minutes.
  5. Assemble the Egg Rolls
  6. Set up your work station with egg roll wrappers and a bowl of water.
  7. Place a generous tablespoon of peach mixture in each wrapper.
  8. Moisten the edges of the wrapper, fold, and roll tightly.
  9. Fry the Egg Rolls
  10. Heat the oil in a deep skillet over medium-high heat.
  11. Carefully fry the egg rolls until golden brown (about 2-3 minutes per side).
  12. Drain the excess oil on paper towels.
  13. Whip Up the Vanilla Bean Sauce
  14. Combine heavy cream and sugar in a saucepan, adding the split vanilla bean.
  15. Simmer until thickened (about 5-7 minutes).
  16. Serve and Enjoy
  17. Plate the warm egg rolls, dusted with powdered sugar, with vanilla bean sauce for dipping.

Notes

You can prepare the filling and assemble egg rolls ahead of time. For a healthier option, consider baking instead of frying.
