Roasted Kohlrabi

A comforting and delicious roasted kohlrabi dish, perfect for any occasion.

Ingredients

  • 5 kohlrabi, peeled and cubed
  • 2 tablespoons olive oil
  • 2 garlic cloves, finely minced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon lemon juice
  • ¼ cup grated Parmesan

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prep the kohlrabi by peeling and chopping it into bite-sized cubes.
  3. Mix the marinade by whisking together olive oil, garlic, salt, pepper, and lemon juice in a large bowl.
  4. Coat the kohlrabi cubes in the marinade and spread them on a baking sheet in a single layer.
  5. Roast for 25 to 30 minutes, flipping halfway for even cooking.
  6. Sprinkle the grated Parmesan over the kohlrabi in the last 5 minutes of roasting.
