Croziflette

A delightful and cozy dish from the Alps featuring crozets, creamy cheese, and smoky lardons, perfect for sharing with family and friends.

  • 200 g crozets
  • 200 g buckwheat crozets
  • 200 g lardons
  • 1 large onion
  • 400 ml crème fraîche
  • 1 reblochon (450 g)
  • Nutmeg
  • Freshly cracked pepper

Instructions

  1. Cook the Crozets: Bring a large pot of salted water to a boil. Add your crozets and cook according to package instructions until al dente, usually around 10-12 minutes. Don’t forget to stir occasionally, so they don’t stick together. Drain the pasta and set aside.
  2. Sauté the Lardons: In a large skillet over medium heat, add the lardons. Cook until they’re crispy and golden, about 5-7 minutes. The rendered fat will add flavor to the dish. Remove them from the skillet, leaving some fat behind.
  3. Caramelize the Onions: In the same skillet with the lardon fat, toss in the sliced onion. Sauté until the onions are soft and caramelized, around 8-10 minutes. Stir them around and let them soak up all that smoky goodness.
  4. Combine Ingredients: In a large mixing bowl, combine the cooked crozets, crispy lardons, and caramelized onions. Add the crème fraîche, a generous grating of nutmeg, and a good crack of pepper. Stir well to coat everything evenly.
  5. Assemble the Dish: Preheat your oven to 200°C (400°F). Spread half of the crozet mixture evenly in a greased baking dish. Slice the reblochon in half horizontally and place one half on top. Top with the remaining crozets and finish by placing the other half of the reblochon on top, rind facing up.
  6. Bake to Perfection: Bake in the preheated oven for about 25-30 minutes, or until the top is bubbly and golden.
  7. Let it Rest: Once out of the oven, allow your croziflette to rest for about 5-10 minutes.

Notes

Croziflette can be made ahead of time and stored in the refrigerator before baking. Substitute the lardons with sautéed mushrooms for a vegetarian version.
