Crustless Zucchini Pie

A comforting and delicious crustless zucchini pie made with simple ingredients, inspired by treasured family memories.

  • 2 medium zucchinis, grated
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1/2 cup grated Parmesan cheese
  • 4 large eggs
  • 1/4 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chopped fresh herbs (basil, parsley, or dill)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchinis using a box grater or food processor, then squeeze out excess moisture.
  3. Chop your onion and garlic. Sauté them in a skillet with olive oil until translucent.
  4. Combine the grated zucchini, sautéed onion and garlic, shredded cheese, grated Parmesan, beaten eggs, flour, baking powder, salt, black pepper, and chopped herbs in a large bowl.
  5. Grease a pie dish and pour the mixture evenly into the dish.
  6. Bake for 30-35 minutes, until the top is golden brown.
  7. Let it cool for a few minutes before slicing.

Notes

For a delicious presentation, garnish with fresh herbs or a dollop of sour cream. This pie can be made ahead of time and freezes well.
