The Ultimate Cucumber Salad

A refreshing and light cucumber salad that captures the essence of summer and family gatherings.

  • 23 medium cucumbers
  • ½ small red onion
  • ¼ cup vinegar (apple cider or white)
  • ¼ cup freshly chopped dill or parsley
  • Pinch of salt
  • Freshly cracked black pepper

Instructions

  1. Prep the cucumbers: Wash and thinly slice the cucumbers, peeling if desired.
  2. Slice the red onion into thin rings.
  3. Mix the dressing by whisking together vinegar, salt, and pepper.
  4. Combine sliced cucumbers, red onion, and fresh herbs in a large bowl. Drizzle dressing on top and toss gently.
  5. Let it marinate for 15-20 minutes at room temperature or in the fridge for about an hour.
  6. Serve it by tossing again and enjoying fresh or after marinating.
