Delicious Peach Cobbler Muffins

A delightful take on classic peach cobbler transformed into portable muffins, perfect for breakfast or a sweet snack.

  • 2 large Fresh Peaches, peeled and chopped
  • 2 cups All-Purpose Flour
  • 3/4 cup Granulated Sugar
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Milk
  • 2 large Eggs
  • 1/4 cup Unsalted Butter, melted
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
  2. Prepare the peaches by peeling and chopping them into small pieces.
  3. Mix the dry ingredients: flour, sugar, baking powder, salt, and cinnamon in a medium bowl.
  4. Whisk the wet ingredients: milk, melted butter, eggs, and vanilla extract in another large bowl.
  5. Combine the dry mixture into the wet mixture, stirring gently until just combined.
  6. Fold in the peach chunks into the batter carefully.
  7. Scoop the batter into the muffin tin about 3/4 full.
  8. Bake for 18-22 minutes, or until a toothpick comes out clean.
  9. Cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with butter or a drizzle of honey for added flavor. Store leftovers in an airtight container.
