Braise de Bœuf avec Purée de Pommes de Terre

A cozy culinary journey through a heartwarming braised beef dish, perfectly paired with creamy mashed potatoes.

  • 1.5 kg de bœuf pour braiser
  • 2 oignons, émincés
  • 4 carottes, coupées en rondelles
  • 2 gousses d’ail, hachées
  • 500 ml de bouillon de bœuf
  • 200 ml de vin rouge
  • 2 cuillères à soupe de pâte de tomates
  • Thym et laurier
  • Sel et poivre au goût
  • 1 kg de pommes de terre, pelées et coupées en cubes
  • 100 ml de lait
  • 50 g de beurre

Instructions

  1. Prepare the Beef. In a large Dutch oven, heat a drizzle of olive oil over medium-high heat. When the oil is shimmering, add the pieces of beef and sear them until they’re beautifully browned on all sides.
  2. Add Aromatics. Remove the beef and set it aside on a plate. In the same pot, toss in the onions, carrots, and garlic. Sauté for about 5-7 minutes, or until the onions are translucent.
  3. Build the Flavor Base. Stir in the tomato paste, letting it cook for a minute until it darkens slightly. Pour in the red wine and let it simmer down for about 3-5 minutes.
  4. Braise the Beef. Return the beef to the pot, and add the beef broth, thyme, and bay leaf. Bring it to a gentle simmer, then reduce to low heat. Cover and let it braise for 150-180 minutes, or until the meat is fork-tender.
  5. Make the Purée de Pommes de Terre. While the beef is cooking, boil the peeled and cubed potatoes in salted water until tender (about 15-20 minutes). Drain, then return to the pot. Add in the butter and milk, then mash to your desired consistency.
  6. Serve It Up. Once your beef is tender, taste and adjust seasoning if needed. Serve a generous scoop of braised beef alongside a hearty serving of mashed potatoes.
