Easy Taco Casserole

A hearty and flavorful taco casserole that brings comfort and simplicity to weeknight dinners. Packed with protein and topped with gooey cheese, it’s a delicious family favorite.

  • 1 pound (450g) ground beef
  • 1 packet (approx. 1 oz / 28g) taco seasoning
  • 1/2 cup (120ml) water
  • 1 (10-ounce / 280g) can diced tomatoes and green chilies, undrained
  • 1 (15-ounce / 425g) can black beans, rinsed and drained
  • 1 (15-ounce / 425g) can corn, drained
  • 810 flour tortillas, cut into bite-sized pieces
  • 2 cups (220g) shredded cheddar cheese
  • Optional toppings: sour cream, salsa, guacamole, chopped cilantro

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a large skillet over medium-high heat for 5-7 minutes.
  3. Season the beef with taco seasoning and stir in the water. Let it simmer for 2-3 minutes.
  4. Mix in the diced tomatoes, black beans, and corn, stirring well.
  5. Layer half the tortilla pieces in a greased 9×13 baking dish, followed by half the beef mixture and half the cheese. Repeat.
  6. Bake covered with foil for 25 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is bubbly.
  7. Serve with your favorite toppings.

Notes

This casserole is forgiving and adaptable. You can easily swap proteins or add seasonal veggies.
