Classic Hearty Vegetable Soup

  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 cups diced tomatoes (canned or fresh)
  • 2 cups mixed vegetables (like green beans, corn, and peas)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté onions, carrots, and celery for about 5-7 minutes until they soften.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Pour in the vegetable broth and diced tomatoes. Bring it to a simmer.
  5. Stir in mixed vegetables and seasonings (thyme, salt, and pepper). Cook for another 15 minutes until everything is tender.
  6. Serve hot, garnished with fresh herbs if you have them.
