Lightened Baked Eggplant Parmesan

A healthier twist on the classic Eggplant Parmesan, lightened and baked to perfection.

Ingredients

  • 2 eggplants, sliced into rounds
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup grated Parmesan
  • 1 egg, beaten
  • 1.5 cups marinara sauce
  • 1/2 cup part-skim mozzarella

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the eggplants by slicing into rounds and salting them. Let sit for 15-20 minutes, then rinse and pat dry.
  3. Create the breading station with breadcrumbs and grated Parmesan in one bowl and the beaten egg in another.
  4. Coat each eggplant slice in the egg, then bread it with the mixture. Place on a greased baking sheet.
  5. Bake the eggplants for 25-30 minutes, flipping halfway through, until golden brown.
  6. Assemble the dish by layering marinara sauce, crispy eggplant, mozzarella, and Parmesan in a baking dish.
  7. Bake covered with foil for 20 minutes, then uncover and bake for an additional 10-15 minutes until bubbly.
  8. Let it rest for 10 minutes before serving.

Notes

Serve with a light side salad or crusty whole-grain bread for a complete meal.
