Cozy Fall Salad with Sweet Potato, Pear, and Blue Cheese

Ingredients

  • 1 medium sweet potato, diced
  • 2 ripe pears, sliced
  • 100g blue cheese, crumbled
  • 4 cups mixed greens (such as spinach, arugula, and kale)
  • 1/4 cup walnuts, toasted
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep the diced sweet potato with olive oil, salt, and pepper.
  3. Roast the sweet potatoes for about 25-30 minutes, flipping halfway through.
  4. Toast the walnuts in a skillet over medium heat for 5-7 minutes.
  5. Assemble the mixed greens in a large salad bowl.
  6. Layer the roasted sweet potatoes, pears, blue cheese, and walnuts on the greens.
  7. Dress the salad with olive oil and balsamic vinegar, then toss gently.
  8. Season to taste with salt and fresh cracked pepper.

Notes
