Easy Back to School Lunch Ideas

Ingredients

  • Whole Wheat Wraps
  • Peanut Butter or Almond Butter
  • Fresh Veggies (Carrots, Cucumbers, Bell Peppers)
  • Fruits (Apples, Bananas, Berries)
  • Hummus or Cream Cheese
  • Deli Meats (Turkey, Ham, Roast Beef)
  • Cheese (Cheddar, Mozzarella, String Cheese)
  • Pasta (Whole Wheat or Gluten-Free)
  • Rice (Brown or Cauliflower)
  • Granola or Energy Bars

Instructions

  1. Lay out a whole wheat wrap and spread a thin layer of cream cheese.
  2. Place a slice of turkey and a slice of cheese on top. Add spinach for some greens!
  3. Roll up tightly and cut into bite-sized pieces.
  4. Pack whole grain crackers, deli meats, and cheese slices in separate compartments.
  5. Add a small container of cherry tomatoes and grapes for a sweet crunch.
  6. Cook pasta according to the package, then rinse with cold water.
  7. Toss with olive oil, diced veggies, cherry tomatoes, and your choice of diced deli meat or grilled chicken.
  8. Slice carrots, cucumbers, and bell peppers.
  9. Layer Greek yogurt, granola, and mixed berries in a jar.
  10. Fill mini whole wheat pitas with lettuce, diced cucumber, and cooked chicken or chickpeas.
  11. Spread marinara sauce on a whole wheat tortilla, add shredded cheese, and your choice of toppings.
