Gâteau aux Pommes à Tomber par Terre

A cozy and delightful French apple cake that captures the warmth of family traditions and nostalgia.

  • 3 Apples (Golden, Reine des Reinettes, or Pink Lady)
  • 150 g All-Purpose Flour
  • 100 g Sugar
  • 3 Eggs
  • 1 Sachet Baking Powder (11 g)
  • 1 Sachet Vanilla Sugar
  • 80 g Melted Butter
  • 10 cl Milk
  • 1 Tablespoon Rum (optional)
  • 1 Pinch of Salt
  • 1 Teaspoon Cinnamon (optional)
  • 2 Tablespoons Brown Sugar (optional for caramelized touch)
  • 10 g Melted Butter (optional for caramelized touch)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Prepare a round 9-inch cake pan by greasing it with butter or oil.
  3. Peel and chop the apples into small cubes.
  4. Mix the flour, baking powder, salt, and cinnamon in a medium bowl.
  5. Beat the eggs and sugar together until light and fluffy.
  6. Add melted butter, milk, and optional rum, and stir until well combined.
  7. Combine the dry mixture into the wet mixture by folding them together until just combined.
  8. Fold in the apple cubes gently to ensure even distribution.
  9. Prepare the caramelized topping by melting remaining butter with brown sugar, and pour it into the prepared cake pan.
  10. Pour the batter into the pan and smooth the top.
  11. Bake for 30 to 40 minutes, or until a toothpick comes out clean.
  12. Cool for 10 minutes before inverting onto a plate.

Notes

Serve warm or at room temperature dusted with powdered sugar. Pair with vanilla ice cream or whipped cream for extra indulgence.
