Gâteau Invisible aux Pommes

A delightful French dessert that combines sweet and tart apple flavors with a simple batter, reminiscent of childhood memories.

  • 4 Apples (firm, sweet varieties like Fuji or Honeycrisp)
  • 3 Eggs (or 1/4 cup unsweetened applesauce per egg)
  • 100g Sugar (or coconut sugar)
  • 200g Milk (whole, almond, or oat milk)
  • 100g Flour (all-purpose or gluten-free)
  • 1 teaspoon Baking Powder (or baking soda with vinegar)
  • 1 teaspoon Vanilla Extract (or almond extract)
  • Pinch of Salt

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Prepare the baking pan by greasing a round cake pan with butter or lining it with parchment paper.
  3. Slice the apples thinly, aiming for 1/8 inch thick slices.
  4. Mix the eggs and sugar in a large bowl until light and fluffy.
  5. Incorporate the milk and vanilla extract slowly until well combined.
  6. Combine the flour, baking powder, and salt in a separate bowl, then gradually add to the wet ingredients.
  7. Fold in the thinly sliced apples gently.
  8. Pour the batter into the prepared cake pan and distribute the apples evenly.
  9. Bake for 40-45 minutes, or until the top is golden and a toothpick comes out clean.
  10. Cool for 10 minutes before transferring to a wire rack to cool completely.

Notes

Dust with powdered sugar, serve with whipped cream or ice cream, or add fresh berries for decoration.
