Warm, fluffy apple fritters that carry a rich history and nostalgic flavors from my grandmother’s kitchen.

Ingredients

  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups apples, peeled and diced

  • Powdered sugar for dusting

Instructions

  1. Prepare your apples by peeling and dicing them into small chunks.
  2. Mix the dry ingredients in a large bowl: flour, baking powder, salt, and sugar.
  3. Combine the wet ingredients in a separate bowl: beaten eggs, milk, and vanilla extract.
  4. Join the wet ingredients into the dry mixture and stir gently until just combined.
  5. Fold in the diced apples evenly into the batter.
  6. Heat about 2 inches of oil in a deep frying pan over medium heat.
  7. Fry rounded tablespoons of batter in small batches until golden brown.
  8. Drain the beignets and dust them generously with powdered sugar while still warm.
