Greek Chicken and Rice Skillet

A cozy one-pan dish that combines chicken thighs, brown rice, and Mediterranean flavors for a heartwarming family meal.

  • 1.5 lb boneless, skinless chicken thighs
  • 1 cup brown rice
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1/4 cup kalamata olives
  • 1/4 cup feta cheese
  • 1 tsp oregano

Instructions

  1. Sear the chicken in a skillet with olive oil, seasoning with salt, pepper, and half of the oregano for 4-5 minutes on each side.
  2. Sauté the cherry tomatoes in the same skillet until softened, adding a splash of chicken broth to deglaze.
  3. Add the brown rice and remaining oregano, then pour in the chicken broth and bring to a simmer.
  4. Nestle the chicken thighs on top of the rice, cover, and cook until rice absorbs the broth, about 35-40 minutes.
  5. Add olives and feta, cover again for 5 minutes to meld flavors.

Notes

This dish can be varied with additional vegetables or spices according to personal preference.
