Greek Chicken Meatballs with Lemon Orzo

Juicy Greek chicken meatballs paired with zesty lemon orzo for a comforting dish.

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup orzo pasta
  • 1 lemon (juice and zest)
  • 2 cups chicken broth
  • Olive oil for cooking

Instructions

  1. Mix the meatball ingredients in a large bowl: ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, salt, and black pepper.
  2. Form into meatballs about the size of a golf ball and place on a baking sheet lined with parchment paper.
  3. Cook in a large skillet with olive oil over medium heat for 6-8 minutes until golden brown.
  4. Prepare lemon orzo by boiling chicken broth, adding orzo, lemon juice, and zest, cooking for about 8-10 minutes.
  5. Combine cooked orzo with meatballs, adjust seasoning, and serve.

Notes

Add a drizzle of tahini mixed with lemon juice for a nutty finish.
