Greek Chicken Souvlaki Grazing Board

  • 1 pound Boneless, skinless chicken breasts
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried oregano
  • ½ teaspoon Paprika
  • To taste Salt & black pepper
  • Wooden skewers (Soak in water for 30 minutes)
  • 1 cup Feta cheese, crumbled
  • ½ cup Plain Greek yogurt
  • 1 tablespoon Olive oil (for yogurt sauce)
  • 1 teaspoon Lemon zest
  • 1 tablespoon Lemon juice (for yogurt sauce)
  • 1 small clove Garlic, minced (for yogurt sauce)
  • 1 tablespoon Fresh dill, chopped
  • 1 package Warm pita bread
  • To taste Cherry tomatoes
  • To taste Sliced cucumbers
  • To taste Kalamata olives
  • To taste Roasted red peppers
  • To taste Fresh herbs (Parsley, mint, or dill for garnish)

Instructions

  1. Marinate the chicken: In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and pepper. Whisk until well mixed. Cut the boneless chicken breasts into bite-sized cubes. Add them to the marinade and ensure each piece is well-coated. Cover and refrigerate for a minimum of 30 minutes, or up to 2 hours for extra flavor.
  2. Soak the wooden skewers in water to prevent burning while grilling.
  3. Assemble and grill the souvlaki: Preheat your grill to medium-high heat. Thread the marinated chicken cubes onto the soaked skewers. Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through.
  4. Prepare the yogurt sauce: In a small bowl, mix Greek yogurt, olive oil, lemon zest, lemon juice, minced garlic, and fresh dill. Set aside in the fridge until ready to serve.
  5. Prep the grazing board: Warm the pita bread. Slice the cucumbers, halved cherry tomatoes, and roasted red peppers. Arrange them on a large serving platter. Place the grilled chicken skewers on the board alongside bowls of yogurt sauce and crumbled feta cheese. Garnish with fresh herbs.

Notes

This dish can be marinated a day in advance and assembled just before serving for convenience. Adjust the seasoning to your taste.
