  • 1 ½ pounds thin-sliced boneless skinless chicken breasts (about 4 breasts)
  • 12 ounces salsa verde
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon salt (or more, to taste)
  • 1 teaspoon freshly ground black pepper
  • 4 slices pepper jack cheese
  • Fresh cilantro, finely minced (optional, for garnishing)
  • Lime wedges (optional, for serving)

Instructions

  1. Combine the ingredients: In a large bowl, mix together the salsa verde, olive oil, lime juice, cumin, salt, and pepper.
  2. Add the chicken: Place the thin-sliced chicken breasts in the marinade, ensuring they are well-coated.
  3. Let it sit: Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 30 minutes.
  4. Get that grill going: Preheat your grill to medium-high heat.
  5. Remove chicken from marinade: Take the chicken out and let the excess marinade drip off.
  6. Grill time: Place the chicken on the grill, cooking for about 5-7 minutes on each side.
  7. Add the cheese: In the last couple of minutes of grilling, place a slice of pepper jack cheese on each piece of chicken.
  8. Rest and garnish: Once done, take the chicken off the grill and let it rest for a few minutes. Garnish with minced cilantro and serve with lime wedges.
