Hawaiian Chicken with Pineapple and Coconut Rice

A tropical dish that mixes savory chicken with sweet pineapple, served over creamy coconut rice.

  • 4 Chicken Breasts
  • 1 can Pineapple Slices
  • 1 cup Coconut Milk
  • 1 cup Rice (long-grain jasmine or basmati)
  • 2 tablespoons Olive Oil
  • Salt & Pepper to taste
  • 3 tablespoons Soy Sauce
  • 2 Green Onions, chopped
  • Sesame Seeds for garnish

Instructions

  1. Marinate the Chicken: In a bowl, combine 3 tablespoons of soy sauce, a pinch of salt and pepper, and 2 tablespoons of olive oil. Mix well!
  2. Sauté the Chicken: Heat a large skillet over medium-high heat. Add a splash of olive oil, then place your marinated chicken breasts in the pan. Cook for 6-7 minutes on each side until golden brown and cooked through.
  3. Add Pineapple: Once your chicken is cooked, add your pineapple slices to the pan, cooking for an additional 2-3 minutes on each side until they’re caramelized and warm.
  4. Prepare Coconut Rice: Rinse 1 cup of rice under cold water until the water runs clear. In a separate pot, mix the rinsed rice with 1 cup of coconut milk and 1 cup of water. Bring to a boil, then reduce to a simmer. Cover and cook for 15-18 minutes, or until the rice is fluffy.
  5. Assemble and Serve: To serve, place a generous scoop of coconut rice on the plate. Top it with your sautéed chicken and caramelized pineapple. Garnish with chopped green onions and a sprinkle of sesame seeds for that extra flair!

Notes

For a tropical plate, consider pairing with grilled vegetables or a green salad topped with citrus vinaigrette.
