Hawaiian Grilled Chicken and Pineapple

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Sliced fresh pineapple for grilling
  • Chopped green onions for garnish

Instructions

  1. Make your marinade by combining pineapple juice, soy sauce, brown sugar, minced garlic, and ground ginger in a bowl.
  2. Marinate the chicken by placing it in a resealable bag or dish, pour the marinade over, and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Prep the pineapple by slicing it into thick rings.
  5. Grill the chicken for about 6-7 minutes on one side, then flip and cook for another 5-6 minutes until the internal temperature reaches 165°F (75°C).
  6. Grill the pineapple for 2-3 minutes on each side until caramelized.
  7. Rest the chicken for 5 minutes, then slice and serve with grilled pineapple and chopped green onions.

Notes

Replace chicken with firm tofu or tempeh for a vegan option. Experiment with marinades for different flavors!
