Healthy Rhubarb Muffins

Delightful and fluffy muffins packed with fresh rhubarb and a healthier twist on the classic treat.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup rhubarb, chopped
  • ½ cup brown sugar
  • ½ cup Greek yogurt
  • 2 eggs
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. Mix the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Combine Greek yogurt, brown sugar, vegetable oil, and vanilla extract until smooth. Add eggs and whisk.
  4. Incorporate the dry ingredients into the wet, folding until just combined.
  5. Fold in the chopped rhubarb gently.
  6. Fill the muffin tin with batter about 2/3 full.
  7. Bake for 20 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.
