Impossible Lemon Pie

A whimsical dessert that magically transforms into two distinct layers while baking, combining a fluffy custardy top with a subtly sweet, cake-like base.

  • ½ cup unsalted butter (melted)
  • 4 large eggs
  • ½ cup all-purpose flour
  • ¼ cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
  • 1 ½ cups whole milk
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the melted butter and sugar in a mixing bowl until well blended.
  3. Add the flour and pinch of salt, stirring until combined.
  4. Beat the eggs in one at a time, ensuring full incorporation.
  5. Incorporate the fresh lemon juice, lemon zest, milk, and vanilla extract until smooth.
  6. Pour the mixture into a greased 9-inch pie dish.
  7. Place the pie in the preheated oven and bake for 40-45 minutes until lightly golden and puffed.
  8. Cool the pie at room temperature for 30 minutes, then refrigerate for at least 2 hours before serving.
  9. Dust with powdered sugar before serving.
