Hearty Beef and Vegetable Stew in the Slow Cooker

A comforting and hearty beef and vegetable stew made in the slow cooker, perfect for chilly evenings.

Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup green beans, trimmed
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium-high heat and add a splash of olive oil.
  2. Toss in the cubed beef and sprinkle with salt and pepper. Sear until browned on all sides, about 4-5 minutes.
  3. While the beef is sizzling, chop your veggies.
  4. Add the seared beef, onions, carrots, potatoes, and garlic to the slow cooker.
  5. Pour in the beef broth.
  6. Add the tomato paste, thyme, rosemary, and a sprinkle of salt and pepper.
  7. Set your slow cooker on low for 6-8 hours or high for 3-4 hours.
  8. Toss in the green beans about 30 minutes before serving.

Notes

This stew tastes even better the next day and can be frozen for later meals.
