Irresistible Mediterranean Pasta Salad

A light yet satisfying pasta salad brimming with vibrant Mediterranean flavors.

  • 14 oz pasta
  • 1 large cucumber, peeled and sliced into 1/2-inch half-moons
  • 18 oz cherry tomatoes
  • 3/4 cup olives
  • 5 oz feta cheese, crumbled
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup olive oil
  • 4 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 2 tsp dried oregano
  • 1 tsp honey
  • 3 garlic cloves, freshly pressed
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes, then drain and rinse under cold water.
  2. Prep the vegetables: slice cucumbers, chop tomatoes, and dice red onion; press the garlic.
  3. Mix the dressing by whisking together olive oil, red wine vinegar, lemon juice, oregano, honey, pepper, salt, and red pepper flakes.
  4. Combine the cooled pasta, cucumbers, tomatoes, olives, red onion, parsley, and feta in a bowl.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Taste and adjust seasoning if necessary.
  7. Chill in the fridge for at least 30 minutes before serving.

Notes

Perfect for meal prep and can be made ahead of time. Store in an airtight container for up to 3 days.
