Keto Watermelon-Lime Cooler

A refreshing and easy-to-make Keto Watermelon-Lime Cooler, perfect for summer sipping!

Ingredients

  • 4 cups fresh watermelon, cubed
  • 1/2 cup fresh lime juice (about 45 limes)
  • 2 tablespoons erythritol (or your preferred keto sweetener)
  • 2 cups cold sparkling water
  • Fresh mint leaves (for garnish)

Instructions

  1. Prep the watermelon by cutting it into cubes and removing any seeds.
  2. Juice the limes until you have about a half cup of fresh lime juice.
  3. Blend the cubed watermelon, lime juice, and erythritol until smooth.
  4. Strain the mixture through a fine mesh sieve into a large pitcher to remove any pulp (optional).
  5. Mix in the cold sparkling water and stir gently to combine.
  6. Serve in glasses filled with ice and garnish with fresh mint leaves.

Notes

For variations, try adding fresh berries, coconut cream, a pinch of cayenne, or turning it into a cocktail with vodka or rum.
