Key West Grilled Chicken

A deliciously tangy grilled chicken marinated with citrus juices and spices, perfect for any gathering.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 1 lime
  • Juice of 1 orange
  • 1/2 cup pineapple juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. Mix the Marinade: In a bowl, combine olive oil, lime juice, orange juice, pineapple juice, minced garlic, salt, and pepper. Whisk it up until it’s well mixed.
  2. Prep the Chicken: Place your chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated.
  3. Fire Up the Grill: Preheat your grill to medium-high heat. If you’re using a charcoal grill, let those coals turn gray before throwing on the chicken.
  4. Grill Time: Remove the chicken from the marinade (discard any leftover marinade) and grill the chicken breasts for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C).
  5. Rest the Chicken: Once cooked, remove the chicken from the grill and let them rest for about 5 minutes. Garnish with fresh cilantro just before serving.

Notes

Marinate for at least 30 minutes; longer for more flavor. Avoid pressing down on the chicken while grilling.
