A refreshing and crunchy kohlrabi slaw tossed with a tangy dressing, perfect as a side dish or picnic treat.

  • 2 medium bulbs kohlrabi
  • 1 large carrot
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste
  • A handful of fresh herbs (like parsley or dill)

Instructions

  1. Start by cutting off the tops and tails of the kohlrabi. Using a vegetable peeler, remove the tough outer skin.
  2. Slice the kohlrabi into thin matchsticks or grate it for a quicker method.
  3. Peel the carrot and slice it into thin matchsticks to match the kohlrabi.
  4. In a bowl, whisk together the apple cider vinegar, olive oil, honey, salt, and pepper.
  5. Combine the sliced kohlrabi and carrots in a large bowl.
  6. Pour the dressing over the top, tossing everything together until well-coated.
  7. Transfer the slaw to a serving platter or bowl and top with freshly chopped herbs.

Notes

For best flavor, let the slaw sit for 15-30 minutes before serving to allow the flavors to mingle.
