Roasted Kohlrabi

  • 4 kohlrabi bulbs
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the kohlrabi bulbs under cool water and scrub them gently to remove any dirt.
  3. Peel away the thick outer skin using a sharp knife.
  4. Slice each bulb into bite-sized cubes or wedges.
  5. Toss the kohlrabi cubes with olive oil, garlic powder, salt, and pepper in a large mixing bowl.
  6. Spread the seasoned kohlrabi cubes on a parchment-lined baking sheet in a single layer.
  7. Roast for about 25-30 minutes, flipping halfway through, until tender and slightly crispy.
  8. Remove from the oven and let cool slightly. Taste and adjust seasoning if necessary.
  9. Serve your roasted kohlrabi in a rustic bowl, garnished with fresh herbs.
