Sautéed Kohlrabi Side Dish

A delightful kohlrabi side dish flavored with garlic, olive oil, and lemon juice that’s easy to make and complements any meal.

Ingredients

  • Kohlrabi Bulb (firm, heavy)
  • Kohlrabi Greens (or substitute with kale or Swiss chard)
  • 2 tablespoons Olive Oil
  • 23 cloves Garlic (minced)
  • Salt and Pepper (to taste)
  • Lemon Juice (to taste)

Instructions

  1. Prep your ingredients: Wash kohlrabi bulbs and greens thoroughly. Peel the kohlrabi and cut it into matchsticks or dice.
  2. Chop the greens into bite-sized pieces.
  3. Sauté the garlic: Heat olive oil in a large skillet, add minced garlic, and sauté for 30 seconds.
  4. Add the kohlrabi matchsticks and season with salt and pepper. Sauté for 5 minutes.
  5. Incorporate the chopped kohlrabi greens and cook for another 2-3 minutes until wilted.
  6. Finish with lemon juice, toss to combine, and serve.

Notes

Serve alongside roast chicken, grilled fish or as a salad base. Try adding herbs or cheese for variations.
