Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
  2. Prepare the apples. Peel and dice your apples and toss in lemon juice to prevent browning.
  3. Mix dry ingredients: whisk together the flour, baking powder, cinnamon, and salt.
  4. Combine wet ingredients: mix the sugar, applesauce, vegetable oil, and eggs until smooth.
  5. Combine everything: gradually add the dry mixture to the wet mixture, stirring gently until just combined, then fold in the diced apples.
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. Bake for 35-40 minutes, or until a toothpick inserted comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
