Lightened Up Chicken Tikka Masala

A lightened-up version of Chicken Tikka Masala that combines vibrant spices and soul-soothing flavors, perfect for a cozy gathering or weeknight dinner.

  • 1.5 lb chicken breast, cubed
  • 1 cup plain Greek yogurt
  • 2 tbsp tikka masala spice blend
  • 1 can crushed tomatoes
  • 1/2 cup light coconut milk
  • 1 onion, diced
  • 2 cloves garlic, minced

Instructions

  1. Marinate the chicken: In a mixing bowl, combine cubed chicken breast with Greek yogurt and tikka masala spice blend. Marinate for at least 30 minutes.
  2. Sauté the aromatics: In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.
  3. Cook the chicken: Add marinated chicken to the skillet and cook for about 7-8 minutes until no longer pink.
  4. Incorporate the tomatoes and coconut milk: Pour in crushed tomatoes and coconut milk. Stir and allow to simmer on low for about 15-20 minutes.
  5. Taste & adjust seasoning: Taste your Tikka Masala and adjust salt or spices as needed.
  6. Serve and enjoy: Once bubbling and fragrant, serve your Chicken Tikka Masala.

Notes

This dish can be made ahead of time for better flavor. It freezes well for up to 3 months.
