Lentil and Vegetable Soup

A delicious and nutritious lentil and vegetable soup, perfect for managing blood sugar while enjoying hearty flavors.

  • 1 cup dried green or brown lentils
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth (low sodium)
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Prep the veggies: Start by chopping the onion, garlic, carrot, and celery.
  2. Sauté the base: In a large pot, heat a splash of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Mix in the rest: Add in the carrots, celery, lentils, diced tomatoes, broth, and spices. Stir well to combine.
  4. Simmer time: Bring the soup to a gentle boil, then reduce the heat to low. Cover and let it simmer for 30-35 minutes or until the lentils are tender.
  5. Taste and adjust: Once the lentils are tender, taste and adjust your seasoning.
  6. Serve it up: Ladle the soup into bowls and top with fresh parsley.
