Mediterranean Turkey Meatball Lunchbox

A healthy and flavorful lunch packed with tender turkey meatballs, creamy hummus, and a colorful medley of fresh vegetables.

  • 1 pound ground turkey
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup hummus
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup mixed vegetables (e.g., bell peppers, cucumbers, cherry tomatoes)
  • Olive oil for drizzling
  • Pita bread (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground turkey, crumbled feta, hummus, garlic powder, onion powder, dried oregano, and a pinch of salt and pepper in a large mixing bowl.
  3. Roll the mixture into balls and place them on a parchment-lined baking sheet.
  4. Bake for about 20 minutes, or until golden brown and cooked through.
  5. Chop your mixed vegetables into bite-sized pieces and drizzle with a little olive oil and salt.
  6. Pack the baked meatballs, fresh veggies, and hummus into your lunchbox, with optional pita on the side.

Notes

These meatballs freeze well; store in a freezer-friendly bag or container once cooled. Keep hummus separate to avoid sogginess.
