Mijoté de Porc aux Légumes

A hearty French stew made with tender pork and fresh vegetables, perfect for comfort food lovers.

  • 2 lbs pork shoulder, cut into chunks
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat, add onion, and cook for 3-4 minutes until transparent.
  2. Brown the pork: Increase the heat to medium-high and add pork shoulder, sear until browned on all sides (about 6-8 minutes).
  3. Add garlic and herbs: Stir in minced garlic, thyme, and rosemary; sauté for another minute until fragrant.
  4. Incorporate the vegetables: Toss in carrots, potatoes, and green beans, gently stir to mix.
  5. Pour in the broth: Add beef broth, bring to a boil, then reduce heat to low, cover and let simmer for 90-120 minutes.
  6. Final seasoning: About 10 minutes before finishing, taste the stew and adjust salt and pepper as needed.

Notes

This dish tastes even better the next day as flavors meld. Can be prepared in advance.
