Tarte aux Pommes à la Crème Amandine

  • 1 pie crust (store-bought or homemade)
  • 45 apples, peeled and sliced
  • 1 cup almond cream (crème amandine)
  • 1/2 cup sugar
  • 1/4 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the pie crust by fitting it into a 9-inch tart pan and trimming the edges. If making from scratch, combine flour, sugar, and butter until crumbly, then add water to form a dough.
  3. Blind bake the crust by placing parchment paper over it and filling with pie weights. Bake for about 15 minutes until light golden.
  4. Slice the apples thinly for even cooking.
  5. Make the almond cream by combining softened butter and sugar, then beating until light and fluffy. Add eggs, vanilla, and almond cream, then fold in flour and salt.
  6. Assemble the tart by spreading almond cream over the cooled crust and arranging apple slices on top.
  7. Bake the tart in the oven for 35-40 minutes until set.
  8. Cool the tart slightly before serving.
