Buddha Bowl with Tahini Dressing

  • 1 can chickpeas, roasted
  • 2 cups cooked quinoa
  • 2 cups baby spinach
  • 1 cup shredded carrots
  • 1 avocado, sliced
  • 3 tbsp tahini
  • 1 tbsp lemon juice
  • Water to thin

Instructions

  1. Preheat your oven to 400°F (200°C). Drain and rinse your chickpeas, then pat them dry. Spread them on a baking sheet, drizzle with olive oil, and season. Roast for about 25-30 minutes until crispy.
  2. Rinse your quinoa in a fine-mesh sieve. Combine 1 cup of quinoa with 2 cups of water in a pot and bring to a boil. Reduce heat, cover, and let simmer for 15 minutes. Fluff with a fork and let cool.
  3. In a small bowl, mix tahini, lemon juice, and a pinch of salt. Gradually whisk in water to achieve desired consistency.
  4. Start with a base of cooked quinoa, then layer in your roasted chickpeas, baby spinach, shredded carrots, and avocado slices. Drizzle with tahini dressing.
  5. For garnish, sprinkle sesame seeds or fresh herbs for a pop of color!
