Cauliflower Fried Rice

A cozy bowl of cauliflower fried rice, a lower-carb, veggie-packed twist on the classic dish that’s easy to whip up.

  • 1 head cauliflower, riced (or 4 cups pre-riced)
  • 2 eggs, beaten
  • 1 cup frozen peas and carrots
  • 3 tbsp low-sodium soy sauce
  • 2 green onions, sliced
  • 1 tbsp sesame oil

Instructions

  1. Rice the cauliflower by removing the leaves and the core, cutting it into florets, and pulsing in a food processor until fine.
  2. Scramble the eggs in a skillet with 1 tablespoon of sesame oil for 2-3 minutes, then set aside.
  3. Stir-fry the frozen peas and carrots in the same skillet with another tablespoon of sesame oil for 3-4 minutes.
  4. Add the riced cauliflower, mix well, and cook for 5-7 minutes to allow flavors to develop.
  5. Season with soy sauce, then mix in the scrambled eggs and sliced green onions.

Notes

Serve warm and consider pairing with grilled protein like chicken or tofu skewers for a complete meal. Adjust soy sauce to taste.
