Easy Cheesy Zucchini Bake

A delightful and comforting dish featuring fresh zucchini, gooey cheese, and a crispy topping.

  • 4 medium zucchini, sliced
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the zucchini by washing and slicing it into about 1/4-inch rounds, sprinkling with salt and letting it sit for 10 minutes to reduce moisture.
  3. Sauté the garlic in olive oil over medium heat for about 1 minute, until fragrant.
  4. Cook the zucchini for 5-7 minutes until they start to soften; season with salt and pepper.
  5. Combine the zucchini and garlic mixture with the shredded cheese and breadcrumbs in a large bowl.
  6. Transfer the mixture to a greased baking dish and top with reserved cheese and breadcrumbs if desired.
  7. Bake for about 25-30 minutes, or until the top is golden and bubbly.
  8. Garnish with fresh herbs and serve.
