Flavorful Cherry Amaretto Upside-Down Cake

  • 2 cups maraschino cherries, drained
  • 1/4 cup unsalted butter (for browning and richness)
  • 1/2 cup brown sugar, packed
  • 2 tbsp amaretto liqueur
  • 1/2 cup unsalted butter (for cake batter)
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup whole milk (or dairy-free milk)
  • 1 tsp pure vanilla extract
  • 1 tbsp amaretto liqueur (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9-inch round cake pan by greasing it with butter.
  3. Create the topping: Melt 1/4 cup butter, stir in brown sugar and 2 tbsp amaretto, then pour into the pan and arrange cherries on top.
  4. Mix together 1/2 cup butter and 1 cup granulated sugar until light and fluffy. Beat in the eggs one at a time, then add vanilla and optional amaretto.
  5. Combine dry ingredients (flour, baking powder, salt) in a separate bowl. Gradually add to wet ingredients alternating with 1/2 cup milk.
  6. Bake for 35-40 minutes or until a toothpick comes out clean.
  7. Cool for 10-15 minutes before flipping onto a serving plate.

Notes

Serve warm with whipped cream or vanilla ice cream for an indulgent treat. Feel free to experiment with different fruits or add nuts for a twist.
