Cherry Cheesecake Brownies

  • 1 cup butter (unsalted)
  • 2 cups sugar (granulated)
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder (unsweetened)
  • 1/4 teaspoon salt
  • 1 cup cream cheese (room temperature)
  • 1/2 cup powdered sugar
  • 1 cup cherry pie filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan or line it with parchment paper.
  3. In a medium saucepan, melt the butter over low heat and stir in the sugar until well combined.
  4. Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, cocoa powder, and salt and gradually add to the wet ingredients.
  6. In a medium bowl, beat the cream cheese with the powdered sugar until smooth and creamy.
  7. Spread the cream cheese mixture evenly over the brownie batter in the baking pan.
  8. Spoon the cherry pie filling over the cream cheese layer.
  9. Bake for about 30-35 minutes, or until the edges are set and a toothpick comes out with a few moist crumbs.
  10. Allow the brownies to cool, then cut into squares.
