Chocolate Cherry Upside Down Cake

  • 1 cup sugar
  • 1 cup all-purpose flour
  • ⅓ cup plus 1 tablespoon cocoa powder
  • 1 tsp baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 eggs
  • ½ cup soured milk
  • ½ cup brewed black coffee
  • ¼ cup vegetable oil
  • ½ teaspoon vanilla extract
  • 2 cups fresh or frozen pitted cherries
  • ⅓ cup sugar (for cherries)
  • 1 teaspoon corn starch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine 2 cups of pitted cherries with ⅓ cup sugar and 1 teaspoon corn starch in a medium saucepan over low heat. Stir gently until syrupy—about 5-7 minutes.
  3. Whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  4. Beat the eggs in another bowl and add soured milk, brewed coffee, vegetable oil, and vanilla extract, whisking until well combined.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Spray a round cake pan with non-stick cooking spray, pour the cherry mixture in, then the chocolate batter on top.
  7. Bake for about 30-35 minutes, until a toothpick inserted in the center comes out clean.
  8. Cool the cake in the pan for about 10 minutes before inverting it onto a serving plate.

Notes
